There are lots of ships repeating a route (NYC through the Panama Canal and back).  Can I get off at the last stop before the turnaround and get on another boat headed for a further destination (New Zealand, Japan, India)?

You can, but it is making life hard for yourself.

Some shipping lines will sell a segment of a voyage - but they will often only do it at the last minute (they obviously prefer to sell a complete round trip if possible).

They are also unlikely to sell a very small segment.

An easier option is to find a shipping line that will offer you a layover. This is when you get off in a port - wait a week or two - and then get onboard another ship belonging to the same shipping line to continue your voyage.

If you want to travel like this, I believe Oldendorff tramp voyages will be your best bet - they are very flexible and they have lots of ships heading all over the place.
